Tempo di preparazione: 1+30 + 10 minuti di cottura + congelamento / scongelamento
Per un tronchetto di 30 cm:
Biscotto morbido al cioccolato:
58g di albumi
31g di zucchero semolato
28g di tuorli
31g di burro
10g di farina
65g di Caraïbes
QS di arachidi
Montare gli albumi con lo zucchero.

Mettere il tutto nel congelatore.
Inserti al caramello e arachidi:
100g di zucchero
2 tuorli
120g di panna liquida
20g di burro
100g di cioccolato al latte
15g di burro di arachidi
Un pizzico di sale
Fate un caramello a secco con lo zucchero e riscaldare la panna liquida con il burro di arachidi.

Versare la panna sul caramello mescolando bene.
Togliere dal fuoco, lasciare raffreddare qualche minuto, quindi versare sul tuorlo d'uovo mescolando. Rimettere in una casseruola e cuocere come una crema inglese a 85°C.
Fuori dal fuoco, aggiungere il burro, il pizzico di sale e il cioccolato al latte, e se necessario, frullare per perfezionare l'emulsione.

Raffreddare completamente in frigorifero.
Mousse al cioccolato al latte & caramello:
33g di zucchero semolato
75g di panna liquida (1)
20g di tuorli
225g di panna liquida (2)
115g di cioccolato Jivara
2g di gelatina
Fare un caramello a secco con lo zucchero, quindi aggiungere la panna (1) precedentemente riscaldata.

Versare sui tuorli mescolando bene, e rimettere sul fuoco. Cuocere a 83°C mescolando continuamente.

Aggiungere quindi la gelatina precedentemente reidratata. Versare sul cioccolato e mescolare bene, se possibile con un mixer a immersione per ottenere una buona emulsione.

Quando il composto è intorno ai 45°C, montare la panna (2) in una chantilly non troppo ferma e incorporarla delicatamente al composto di cioccolato.

Procedere immediatamente con il montaggio.
Montaggio:
Versare 2/3 della mousse sul fondo dello stampo e farla risalire con una spatola affinché copra tutte le pareti dello stampo. Distribuire un cilindro di cremoso al caramello e arachidi al centro e coprire con la mousse.

Infine, aggiungere il biscotto/croccante. Livellare bene, poi mettere il tronchetto nel congelatore.
Decorazione ganache montata cioccolato al latte:
115g di cioccolato al latte al 40%
250g di panna liquida intera
Sciogliere il cioccolato al latte a bagnomaria o al microonde, molto lentamente. Riscaldare metà della panna, poi versarla in tre volte sul cioccolato fuso mescolando bene, in modo da creare un'emulsione.
Una volta che la ganache è liscia, aggiungere il resto della panna fredda, mescolare per ottenere una crema omogenea, coprire a contatto e mettere in frigo fino al giorno successivo.
Il giorno successivo, sformare il tronchetto. Montare la ganache fino a ottenere una ganache montata, poi distribuirla sul tronchetto.

Decorare con alcune arachidi e poi lasciar scongelare il tronchetto almeno 3-4 ore in frigorifero e godetevi!
